Mexican Baked Cod
MEXICAN BAKED COD
Flaky baked cod covered in spicy salsa and cheddar cheese and topped with a nice crunch from the crushed corn chips.
This is a super easy meal you most likely have all the ingredients for in the kitchen already. Serve it with a side of Spanish rice, black beans, corn or whatever you like.
WHAT YOU NEED
cod
salsa
cheddar cheese
corn chips
avocado and sour cream for garnish
HOW TO MAKE IT
Preheat oven to 400 degrees. Lightly grease one 8×12 inch baking dish. Rinse fish fillets under cold water, and pat dry with paper towels.
Pour half the salsa on the bottom of the baking dish.
Lay fillets side by side in the prepared baking dish. Pour the remaining salsa over the top.
Sprinkle evenly with the shredded cheese.
Add the corn chips to a plastic bag and crush with a rolling pin.
Top with the crushed corn chips.
Bake, uncovered, in the preheated oven for 30 minutes, or until fish is opaque and flakes with a fork.
Serve topped with sliced avocado and sour cream if desired.

- 1.5 lb cod
- 1 cup salsa
- 1 cup cheddar cheese (shredded)
- 1/2 cup corn chips (crushed)
- sour cream and avocado (optional)
Instructions

- Bake, uncovered, for 30 minutes or until fish flake with a fork.
- Garnish with sliced avocado and sour cream if desired.
- Serve with a side of rice, corn or beans.
