Ingredients
- 32 oz frozen hashbrowns
- 1 lb bacon
- 1 sweet onion (diced)
- 8 oz cheddar cheese (shredded)
- 1 red bell pepper (diced)
- 1 tbsp diced jalapeno
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tbsp creole seasoning
- 12 eggs
- 1 cup milk
Instructions
- Preheat ove to 350 degrees.
- cut bacon into small pieces
- In a pot cook the bacon until crispy, stirring often to id doesnt stick.
- In a large mixing bowl combine the hashbrowns, salt, pepper, creole seasoning, onions, bell pepper, jalapeno and half the cheese.
- Add the bacon along with the bacon grease to the bowl and mix well.
- Lightly spray a large baking dish with cooking spray.
- Pour the hashbrown mixture into the pan and spread out evenly.
- In the same bowl beat the eggs and milk together.
- Pour egg mixture over the casserole.
- Top with the remaining cheese.
- Season with more salt and pepper if desired.
- Cook uncovered for 30 minutes. or until golden brown.
