HASHBROWN BREAKFAST CASSEROLE

Everything breakfast in one pan. Hashbrowns, bacon, eggs, and cheese with some veggies and seasonings.

This delicious not fuss casserole has everything you need for breakfast all packed into one dish and baked until golden brown and crispy.

 

WHAT YOU NEED

frozen hashbrowns
bacon
sweet onion
cheddar cheese
bell pepper
diced jalapeno
salt
black pepper
creole seasoning
eggs
milk

 

HOW TO MAKE IT

Preheat oven to 350 degrees. Cut bacon into small pieces. In a pot cook the bacon until crispy, stirring often so it doesn’t stick.

In a large mixing bowl combine the hash browns, salt, pepper, creole seasoning, onions, bell pepper, jalapeno, and half the cheese.

Add the bacon and the bacon grease to the bowl and mix well. Lightly spray a large baking pan with cooking spray. Pour the hash brown mixture into the pan and spread out evenly.

In the same bowl beat eggs and milk together. 

Pour egg mixture over the casserole.

Top with the remaining cheese. Season with more salt and pepper if desired. Cook uncovered for 30 minutes.

  • 32 oz frozen hashbrowns
  • 1 lb bacon
  • 1 sweet onion (diced)
  • 8 oz cheddar cheese (shredded)
  • 1 red bell pepper (diced)
  • 1 tbsp diced jalapeno
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tbsp creole seasoning
  • 12 eggs
  • 1 cup milk

  • Preheat ove to 350 degrees.

  • Cook uncovered for 30 minutes. or until golden brown.
  • Serve and enjoy with some fruit and coffee.
