Mexican Baked Cod

Ingredients
  

  • 1.5 lb cod
  • 1 cup salsa
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup corn chips (crushed)
  • sour cream and avocado (optional)

Instructions
 

  • Preheat oven to 400 degrees.
  • Lightly grease a baking dish.
  • Rinse fish fillets under cold water, and pat dry with a paper towel.
  • Pour half the salsa on the bottom of the baking dish.
  • Lay fillets side by side in the prepared baking dish.
  • Pour the remaining salsa over the top.
  • Sprinkle evenly with the shredded cheese.
  • In a plastic bag add the corn chips and crush with a rolling pin.
  • Top with the crushed corn chips.
  • Bake, uncovered, for 30 minutes or until fish flake with a fork.
  • Garnish with sliced avocado and sour cream if desired.
  • Serve with a side of rice, corn or beans.
