Creamy Spinach Ravioli

CREAMY SPINACH RAVIOLI

Tender cheese-filled ravioli in a creamy garlic sauce made with creamed spinach, sauteed onions, bell peppers, and cream cheese.

Every family loves ravioli. You can stuff these yummy little things with just about anything you want. Tonight I have a healthy cheese-filled ravioli with spinach and sauteed veggies that will make it hard for you to put your fork down.

 

WHAT YOU NEED

mushrooms
sweet onion
red bell pepper
minced garlic
black pepper
frozen cheese-filled ravioli
reduced-fat cream cheese
evaporated milk
frozen creamed spinach
parmesan cheese
salad, garlic bread (optional)

 

HOW TO MAKE IT

Slice mushrooms, chop the onion and dice the bell pepper. Cook ravioli according to package directions. Lightly spray a large skillet with cooking spray and heat on medium heat. Add mushrooms, onion, bell pepper, garlic, and black pepper. 

Cook and stir 3-4 minutes or until vegetables are tender and all liquid is absorbed. Reduce heat to low and add cream cheese and evaporated milk. Stir until cream cheese is melted and sauce is smooth. 

Stir in creamed spinach and simmer over low heat 1-2 minutes or until heated through. 

Pour vegetable mixture over ravioli; stir gently. Serve immediately with Parmesan cheese, if desired.

Serve with a side salad and garlic bread.

  • 25 oz refrigerated light cheese-filled ravioli
  • 3 oz reduced-fat cream cheese
  • 1/3 cup fat-free evaporated milk
  • 10 oz frozen creamed spinach
  • 1/2 cup parmesan cheese
  • salad, garlic bread (optional)
