Cranberry Chicken & Rice
Hello, my fellow foodie adventurers!
Today’s quest is a flavor quest where tangy, sweet, and spicy collide in the most delicious way. This juicy cranberry chicken is pure magic—bright bursts of cranberry, a honeyed kick of heat, and savory depth all wrapped around tender chicken, served over fluffy rice with a side of perfectly sautéed zucchini. Cranberries aren’t just for the holidays… they’re secret weapons in the kitchen. Today we’re turning that humble can into a sticky, mouthwatering sauce that will have you licking the spoon (and the plate). One bite and you’ll understand why this easy weeknight hero is so dang good it makes my mouth water just thinking about it.
Ingredients You’ll Need (The Quest Inventory)
- 1 can (14–16 oz) whole berry cranberry sauce
- 16 oz (1 bottle) sweet & spicy honey French salad dressing
- 1 packet onion soup mix
- 4 boneless, skinless chicken breasts (about 1½–2 lbs), cut into 1-inch cubes
- 1½ cups uncooked rice (white, jasmine, or brown)
- 2 medium zucchini, sliced into half-moons or rounds
- Optional: salt, black pepper, olive oil or butter for the zucchini, chopped green onions or parsley for garnish
How to Forge the Feast (The Quest Steps)
- Preheat the oven to 325°F (165°C).
- In a medium bowl, whisk together the cranberry sauce, salad dressing, and onion soup mix until well combined.
- Add the cubed chicken and toss to coat thoroughly.
- Transfer the chicken and sauce mixture to a baking dish (9×13-inch works well). Bake uncovered for 30–40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbly. Stir once halfway through if desired.
- While the chicken bakes, cook the rice according to package directions.
- Heat a skillet over medium heat with a little olive oil or butter. Add the sliced zucchini and sauté 5–7 minutes until tender-crisp. Season lightly with salt and pepper.
- To serve: Spoon rice onto plates, top with the cranberry chicken and plenty of sauce, and add sautéed zucchini on the side or mixed in. Garnish if desired. Enjoy!
Tips Tricks & Tasty Variations
Tips:
- •Chicken size: Cubes cook faster and more evenly than whole breasts at this lower temperature. If you prefer whole breasts, increase baking time to 45–55 minutes and check for 165°F.
- •Sauce consistency: The mixture is intentionally saucy and slightly sweet-spicy. If you want it thicker, you can reduce it on the stove-top after baking or stir in a cornstarch slurry (1 tsp cornstarch + 1 Tbsp water) during the last 10 minutes.
- •Make-ahead: Mix the chicken and sauce, cover, and refrigerate up to 24 hours before baking.
Tasty Variations:
- •Add a pinch of red pepper flakes or a dash of hot sauce for more heat.
•Swap zucchini for broccoli florets or green beans.
•Use brown rice or cauliflower rice for a different base.
•For a slower-cooker version: Combine everything except the rice and zucchini in a slow cooker on low for 4–5 hours.
This keeps the original easy, dump-and-bake spirit while tightening the wording, adding clearer timing cues, and filling in a few practical details. Let me know if you’d like a spicier version, lower-sugar tweaks, Instant Pot instructions, or any other adjustments!
