Hello, my fellow foodie adventurers!

Today’s quest is definitely a flavor adventure: Bacon Cheeseburgersam I right? Who doesn’t love that crispy bacon piled on a juicy beef patty, topped with a thick slice of cheese and all your favorite fixings? Mine always include some jalapeños for that perfect kick. The good news? You can still enjoy almost everything you love about a classic bacon cheeseburger except the bun. I know, it’s a little sad at first… but trust me, you won’t miss it with this dish. We’re turning those bold, savory burger flavors into a hearty, satisfying salad loaded with seasoned ground pork and bison, crispy bacon, cheddar cheese, fresh greens, tomatoes, and spicy jalapeños. A creamy burger-style dressing brings it all together. It’s rich, meaty, and completely low-carb pure bacon cheeseburger satisfaction in every bite.

Ingredients You’ll Need (The Quest Inventory)

For the Meat

  • 1 lb ground pork
  • 1 lb ground bison
  • 1 large package bacon, cooked and chopped (divided)
  • ½ cup yellow onion, finely diced
  • 1 tsp adobo seasoning
  • 1 tsp garlic powder
  • ½ tsp black pepper

For the Salad

  • 2 heads romaine lettuce, chopped
  • 1 bag baby spinach
  • 2 cups shredded cheddar cheese
  • 2 tbsp minced jalapeños
  • 16 oz cherry tomatoes, halved

For the Dressing

  • 6 oz mayonnaise
  • 2½ tbsp tomato paste
  • 4 tsp Dijon mustard
  • 4 tsp onion powder
  • 2 tsp hot sauce
  • 2 tsp Worcestershire sauce
  • 1 tsp black pepper

How to Forge the Feast (The Quest Steps)

  1. 1. Heat a large pan over medium heat.
  2. 2. In a large mixing bowl, combine the ground pork, ground bison, half of the chopped bacon, diced yellow onion, adobo seasoning, garlic powder, and black pepper. Mix until well combined.
  3. 3. Add the meat mixture to the pan and cook, breaking it up as it browns, until fully cooked.
  4. 4. Drain the cooked meat into a bowl and set aside to cool slightly.
  5. 5. In a large salad bowl, add the chopped romaine lettuce, baby spinach, shredded cheddar cheese, remaining chopped bacon, minced jalapeños, and halved cherry tomatoes.
  6. 6. Add the cooked meat to the salad bowl and toss well.
  7. 7. (Optional but recommended) Add 1–2 tablespoons of the reserved meat drippings to the salad and toss again for extra flavor.

For the Dressing
8. In a small bowl, whisk together the mayonnaise, tomato paste, Dijon mustard, onion powder, hot sauce, Worcestershire sauce, and black pepper until smooth. Transfer to a squeeze bottle or serve with a spoon on the side.

Toss the salad once more, then drizzle with the dressing or serve it on the side. Enjoy immediately.

Tips Tricks & Tasty Variations

Cooking Tips:

  • •Don’t skip the meat drippings — they add amazing burger-like richness to the salad.
  • •Cook the bacon until very crispy so it stays crunchy in the salad.
  • •Taste the dressing and adjust the hot sauce for more or less heat.

Tasty Variations:

  • •Use all ground beef or a mix of beef and pork if preferred.
  • •Add diced pickles or red onion for classic burger toppings.
  • •Swap cheddar for pepper jack cheese for extra spice.
  • •Make it a wrap using large lettuce leaves.
