Spinach Quiche

SPINACH QUICHE

Cheesy spinach quiche made with sauteed onions and spinach folded with muenster cheese and eggs. Baked in a flaky pie crust.

Nothing screams brunch better than quiche and mimosas. This is my favorite quiche. The Muenster cheese in so yummy. It’s also one of the easiest to make in my opinion.

 

WHAT YOU NEED

pie crust
olive oil
sweet onion
frozen chopped spinach
eggs
Muenster cheese
salt
black pepper
ground red pepper

 

HOW TO MAKE IT

Preheat oven to 350 F. Heat oil in a large skillet over medium heat. Chop the onions and set aside. Thaw and drain the spinach. Add the onions to the heated oil and sautee until soft. Add the spinach and continue cooking until moisture has evaporated. In a large mixing bowl, combine eggs, shredded cheese, salt, black pepper, and red pepper and mix well. Add onions and spinach mixture to the bowl and combine.

Pour evenly into the pie crust.

Bake for about 30 minutes or until eggs has set.

Let cool for about 10 minutes before cutting. It will fall apart if you don’t.

Ingredients
  

  • 2 pie crust
  • 1 tbsp vegetable oil
  • 1 sweet onion (chopped)
  • 10 oz frozen chopped spinach
  • 6 eggs
  • 12 oz Muenster cheese (shredded)
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp ground red pepper

Instructions
 

  • Preheat oven to 350 F
  • Heat oil in a large skillet over medium heat
  • Chop the onions and add to the skillet
  • Thaw and drain the chopped spinach
  • Sautee onion until soft
  • Add the spinach to the onions and continue cooking until moisture has evaporated
  • In a large mixing bowl add eggs, cheese, salt, black pepper, and red pepper, Mix well
  • Add the onion and spinach to the bowl and fold together
  • Evenly distribute mixture into the two pie crust
  • Bake for about 30 minutes. Or until eggs of set
  • Let cool for 10 minutes before cutting
