Hello, my fellow foodie adventurers!

Today’s Quest is Ground Turkey & Sweet Potato Skillet Juicy seasoned ground turkey, tender cauliflower “potatoes,” peppers, onions, and fresh thyme, all crowned with a blanket of gooey mozzarella. This is the easy, cheesy skillet dinner your busy nights have been begging for!

 

Ingredients You’ll Need (The Quest Inventory)

  • 2 tbsp olive oil (the golden flame)
  • 1 lb ground turkey (the lean champion)
  • 1 tsp minced garlic (the bold essence)
  • ½ cup sweet onion, diced
  • 1 yellow bell pepper, diced
  • 4 cups sweet potatoes cut into small bite-sized pieces
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp cumin
  • ½ tsp chili powder (or ¼ tsp crushed red pepper for heat)
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • ¾ cup shredded mozzarella cheese (molten treasure)
  • 2 green onions, thinly sliced (verdant scouts)

How to Forge The Feast (The Quest Steps)

  • Preheat oven to 400°F (if your skillet is oven-safe — otherwise we’ll finish it on the stove).
  • Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat.
  • Add ground turkey and garlic. Break up the meat with a spatula and cook until no longer pink, about 6–8 minutes.
  • Toss in the diced sweet onion and yellow bell pepper — sauté until softened and golden, about 4 minutes.
  • Stir in the sweet potato pieces, salt, pepper, cumin, chili powder, and fresh thyme.
  • Cover and cook 10–12 minutes, stirring occasionally, until sweet potato is fork-tender but still has a little bite (we’re going for that perfect “sweet potato” texture!).
  • Sprinkle the shredded mozzarella evenly over the top.
  • Pop the skillet in the oven for 5–7 minutes until the cheese is bubbly and golden (or cover and melt on the stove-top if your skillet isn’t oven-safe).
  • Remove, shower with sliced green onions and a pinch of crushed red pepper.
  • Serve straight from the skillet with a big spoon — dinner is DONE!

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 tsp minced garlic
  • 1/2 cup sweet onions (chopped)
  • 1 yellow bell pepper (chopped)
  • 3 sweet potatoes (diced)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 tsp fresh thyme leaves
  • 1/2 cup mozzarella cheese (shredded)
  • 2 green onion (thinly sliced)
  • 1 tsp crushed red pepper

Instructions
 

  • Preheat the oven to 400 degrees F.
  • In a large skillet, heat olive oil over medium-high heat.
  • chop the onion, yellow bell pepper and sweet potatoes.
  • Add ground turkey and garlic and cook breaking up the meat with a meat chopper for about 10 minutes.
  • Add onions, yellow peppers and cook until onions are golden brown.
  • Add the sweet potatoes, chili powder, salt, pepper, thyme and cumin.
  • Cover the skillet and cook until they are tender about 15 minutes.
  • When the sweet potatoes are tender, add shredded mozzarella cheese and stick in the oven to melt the cheese.
  • When the cheese is melted remove from the oven and garnish with the green onion and crushed red pepper.
