GROUND TURKEY & SWEET POTATO SKILLET

Seasoned ground turkey with sauteed veggies and fresh thyme mixed with yummy diced sweet potatoes and covered in melty mozzarella cheese.

This sweet potato and ground turkey dish is so amazing. its an easy skillet meal that comes together perfectly for a weeknight meal.

 

WHAT YOU NEED

olive oil
ground turkey
minced garlic
sweet onion
yellow bell pepper
sweet potatoes
salt
pepper
cumin
chili pepper
mozzarella cheese
green onion
crushed red pepper

 

HOW TO MAKE IT

In a skillet, heat olive oil over medium-high heat. Add ground turkey and garlic. Stir occasionally and cook for about 10 minutes. Add onions and yellow peppers and cook until onions are golden brown. Add the sweet potato, chili pepper, salt, pepper, and cumin.

Cover the skillet and cook until they are tender about 15 minutes. Don’t forget to stir occasionally.

While the sweet potato is cooking pre-heat the oven to 400 degrees. When the sweet potato is tender, add shredded mozzarella cheese

Bring the skillet to the oven to melt the cheese. When the cheese melts, remove from the oven and garnish with green onions and crushed red pepper.

  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 tsp minced garlic
  • 1/2 cup sweet onions (chopped)
  • 1 yellow onion (chopped)
  • 3 sweet potatoes (diced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cumin
  • 1/4 tsp chili pepper
  • 1/2 cup mozzarella cheese (shredded)
  • 1 green onion (thinly sliced)
  • 1 tsp crushed red pepper

Instructions
 

  • Preheat the oven to 400 degrees F.
  • In a large skillet, heat olive oil over medium-high heat.
  • chop the onion, yellow bell pepper and sweet potatoes.
  • Add ground turkey and garlic and cook breaking up the meat with a meat chopper for about 10 minutes.
  • Add onions, yellow peppers and cook until onion sare goldn borwn.
  • Add the sweet potatoes, chili pepper, salt, pepper and cumin.
  • Cover the skillet and cook until they are tender about 15 minutes.
  • When the sweet potatoes are tender, add shredded mozzarella cheese and stick in the oven to melt the cheese.
  • When the cheese is melted remove from the oven and garnish with the green onion and crushed red pepper.
