I use this vegetable spiralizer I got off Amazon, and it works great. It makes quick work of turning fresh zucchini into long, pasta-like strands that hold up perfectly under a hearty sauce. This meat sauce itself is loaded with ground beef, crispy bacon, aromatic Italian herbs, a splash of red wine, and a touch of cream for richness. - 2 tbsp olive oil
- 6 slices bacon, cooked and chopped
- 1 lb ground beef
- 2 celery stalks, finely chopped
- 1 tsp onion powder
- ½ tsp garlic powder
- 1 tsp dried oregano

- ⅛ tsp red pepper flakes
- 1 tsp sea salt (plus more to taste)
- ½ tsp black pepper
- 3 tbsp red cooking wine
- 14 oz petite diced tomatoes with juice
- ¼ cup heavy cream

- 2 large zucchinis
- ½ cup grated Parmesan cheese

- 9. Add the red wine vinegar and the chopped bacon. Taste and adjust seasoning with additional salt and pepper if needed.
- 10. While the sauce finishes, spiralize the zucchinis into noodles. Place them in a microwave-safe bowl, season with a pinch of salt and pepper, cover, and microwave for 1 minute. Stir and microwave for another 1 minute until just tender.
- 11. Divide the zucchini noodles between plates, top with the meat sauce, and sprinkle generously with Parmesan cheese. Serve immediately.
