Fried Pork Chops With Caramelized Onion Gravy

FRIED PORK CHOPS WITH CARAMELIZED ONION GRAVY

Delicious Tender and crispy pork chops breaded in fresh herbs and panko, fried to a golden crust, covered in caramelized onion gravy and served with a crisp apple cabbage slaw.

It’s always fun to get out some frustration with a meat mallet and a couple of pork chops. =) And it makes for a melt in your mouth tender piece of meat. I love the combination of fresh herbs and spices with the panko breading.  Covered with the caramelized onion gravy, and topped with the apple cabbage slaw. I was tempted to lick my plate when we were done, it’s so dang good.

 

WHAT YOU NEED

panko
fresh parsley
fresh rosemary
fresh thyme
salt
black pepper
boneless pork loin chops
flour
egg whites
canola oil
sweet onions
flour
skim milk
chicken soup base
red cabbage
green cabbage
apple
lemon vinaigrette

 

HOW TO MAKE IT

Combine the first 3 ingredients, along with 1/2 tsp. salt, and 1/2 tsp.

pepper in a shallow dish. Place each pork chop between 2 sheets of plastic wrap, and flatten to 1/8-inch thickness, using a rolling pin or flat side of a meat mallet. Sprinkle pork with remaining 1 tsp. each salt and pepper. 

Place flour in a shallow dish. Place egg whites in another shallow dish. Dredge pork in flour, dip in egg whites, and dredge in breadcrumb mixture, pressing to adhere; place on a wire rack. Heat 1 1/2 Tbsp hot oil in a large nonstick skillet over medium heat. Cook pork chops 5 minutes per side or until golden. 

Transfer to a baking sheet and into the oven to keep warm. Repeat with remaining pork. For the Gravy Heat a large nonstick skillet over medium heat. NO OIL! Spread ¼ cup flour in the bottom and brown while constantly stirring as not to burn the flour. When it reaches the color you like, transfer to a bowl and set aside. Set the pan back on the heat and Sauté onion in hot oil over medium heat 6 to 8 minutes or until golden brown. Gradually whisk the milk into the browned flour until smooth.  Add milk mixture to the onion, and cook over medium heat, whisking constantly, 3 to 5 minutes or until thickened and bubbly. Whisk in soup base and pepper until blended. Shred the cabbage and apple and toss well with the lemon vinaigrette.

Serve with a side of mashed potatoes.

Ingredients
  

  • 2 cups of panko
  • 1/4 cup fresh parsley (chopped)
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh thyme (chopped)
  • 1 1/2 tsp salt (devided)
  • 1 1/2 tsp black pepper (divided)
  • 5 boneless pork loin chops
  • 1/2 cup flour
  • 4 egg whites
  • 6 tbsp canola oil
  • 5 servings instant mashed potatoes

CARAMELIZED ONION GRAVY

  • 1/2 cup sweet onion (diced)
  • 2 tsp olive oil
  • 1/4 cup flour (browned)
  • 1 1/2 cups of skim milk
  • 1 tbsp chicken soup base
  • 1/2 tsp black pepper

APPLE CABBAGE SLAW

  • 1 cup red cabbage (finely shredded)
  • 3 cups green cabbage (finely shredded)
  • 1 apple (finely shredded)
  • 3/4 cup fresh parsley (loosely packed)
  • 2 tbsp lemon vinaigrette

Instructions
 

  • Preheat oven to 200 degrees F
  • Combine the first 3 ingredients, along with 1/2 tsp salt and 1/2 tsp pepper in a shallow dish
  • Place each pork chop between 2 sheets of plastic wrap, and flatten to 1/8 inch thickness
  • Sprinkle pork with remaining 1 tsp each of salt and pepper
  • Place flour in a shallow dish
  • Place egg whites in another shallow dish
  • Heat 1 1/2 tbsp oil in a large nonstick skillet over medium heat

  • Transfer to a parchment lined baking sheet and place in the oven to keep warm
  • Repeat with remaining pork chops

GRAVY

  • Heat a large nonstick skillet over medium heat. No oIil!!
  • Spread 1/4 cup flour in the bottom and brown while sonstantly stirring as not the burn the flour. When it reaches the color you like, transfer to a bowl and set aside.
  • Set the pan back on the heat and saute onion in hot oil over medium heat for 8 minutes or until goldn brown.
  • Gradually whisk the milk into the browned flour until smooth
  • Add milk mixture to the onion, and cook over medium heat, whisking constantly. 5 minutes or until thickened and bubbly.
  • whisk in soup base and pepper until blended

apple cabbage slaw

  • Shred the cabbage and apple
  • Toss well with the parsley and lemon vinaigrette
  • Serve with a side of mashed potatoes
