Crockpot Chicken Tacos
CROCKPOT CHICKEN TACOS
Zesty shredded chicken slow-cooked all day with tomatoes, onions, garlic, cilantro, jalapenos, and taco seasoning. Served on a tortilla and topped with your favorite taco toppings.
It’s taco night again and I have a super easy one for you tonight. Just toss it all in the crockpot turn it on and let it do its thing. Crockpot meals are a working girl’s friend, lol. They make it easy to through something in the crockpot in the morning before you have to head off to work.
WHAT YOU NEED
chicken breast
taco seasoning
sweet onion
diced jalapeno
minced garlic
salsa
fire-roasted garlic tomatoes
chopped green chilies
cilantro
tortillas
reduced-fat cheddar cheese
light sour cream
HOW TO MAKE IT
Place chicken breasts in the bottom of the crockpot. Sprinkle taco seasoning evenly over the chicken. Top with diced onion, jalapeno, garlic, salsa and then pour tomatoes over the top with the undrained green chiles.
Cover and cook on low for 6 to 8 hours. Shred the chicken with forks and mix well.
Serve on tortillas with your favorite toppings.

Ingredients
- 1 lb chicken breast
- 1 packet taco seasoning
- 1 cup sweet onion (diced)
- 1 tbsp diced jalapeno
- 2 tsp minced garlic
- 1 cup salsa
- 14 oz diced fire roasted garlic tomatoes
- 6 oz chopped green chilies (undrained)
- 1/2 cup fresh cilantro (chopped)
- 12 tortillas
- 1.5 cup reduced-fat cheddar cheese
- 6 tbsp light sour cream
Instructions
- Place the chicken breasts in the bottom of the crockpot.
