Spaghetti & Turkey Meatballs

SPAGHETTI & TURKEY MEATBALLS

Delicious turkey meatballs loaded with parmesan cheese, fresh parsley, and Italian bread crumbs. Served with a zesty red sauce made with sauteed onions, garlic, tomatoes, basil, and seasonings,  and tossed with whole what pasta.

Today I have a healthy version of Spaghetti & Meatballs. Made light by using turkey and whole what pasta. My kid’s eyes lit up when I told them what was for dinner tonight.

I do have to say that it’s getting harder with the world in chaos to plan a week of meals and actually find what I need. I’m having to improvise, My posts might start getting a little crazy, lol. I was going to make chili this week. But, I can’t find a bag of pinto beans anywhere. Things will get better. Stay safe everyone.

 

WHAT YOU NEED

whole what pasta
olive oil
sweet onion
minced garlic
black pepper
sugar
crushed red pepper
crushed tomatoes
tomato paste
fresh basil
Italian bread crumbs
egg
grated parmesan cheese
fresh parsley
dried oregano
salt
ground turkey

 

HOW TO MAKE IT

Preheat oven to 350 degrees. In a stand mixer combine all the ingredients for the meatballs.

Boil salted water for the pasta. Make the meatballs and place them on a parchment-lined baking sheet.

Bake for 25 minutes.

In a large pot heat olive oil on medium heat. Add the diced onion, crushed red pepper, and minced garlic and cook for about 5 minutes.

Add the crushed tomatoes, tomato paste, pepper, sugar, and basil and continue cooking.

When the water is boiling cook the pasta according to package directions. Combine the cooked noodles and meatballs with the tomato sauce and toss to coat everything.

Serve and enjoy.

Ingredients
  

  • 12 oz whole what spaghetti noodles
  • 1 tsp salt

Tomato Basil Sauce

  • 1 tbsp olive oil
  • 1 cup sweet onion (diced)
  • 5 tsp minced garlic
  • 1 tsp black pepper
  • 1 tsp sugar
  • 1/4 tsp crushed red pepper
  • 56 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 4 tbsp fresh basil (chopped)

Turkey Meatballs

  • 1 lb ground turkey
  • 1/2 cup Italina breadcrumbs
  • 1 egg
  • 1/2 cup grated parmesan cheese
  • 2 tbsp fresh parsley (chopped)
  • 1/2 tsp dried oregano
  • 1 tsp salt

Instructions
