Creamy Spinach Ravioli

Ingredients
  

  • 8 oz mushrooms (sliced)
  • 1/2 cup sweet onion (diced)
  • 1 red bell pepper (diced)
  • 2 tsp minced garlic
  • 1/4 tsp black pepper
  • 25 oz refrigerated light cheese-filled ravioli
  • 3 oz reduced-fat cream cheese
  • 1/3 cup fat-free evaporated milk
  • 10 oz frozen creamed spinach
  • 1/2 cup parmesan cheese
  • salad, garlic bread (optional)

Instructions
 

  • Slice mushrooms, chop the onions, and dice the bell pepper.
  • Cook ravioli according to package directions.
  • Lightly spray a large skillet with cooking spray and heat on medium heat.
  • Add mushrooms, onions, bell peppers, garlic, and black pepper.
  • Cook and stir 3-4 minutes or until cegetables are tender and all the liquid is absorbed.
  • Reduce heat to low and add cream cheese and evaporated milk.
  • Stir until cream cheese is melted and sauce is smooth.
  • Stir in creamed spinach, and simmer over low heat 1-2 minutes or until heated through.
  • Pour vegetable mixture over ravioli and gently toss.
  • serve immediatly with a side salad and garlic bread.
