Chipotle Glazed Chicken with Roasted Sweet Potatoes

This Chipotle Glazed Chicken is so dang yummy. Mixing the glaze in with the sweet potatoes just gives it an added bonus. Plus this is one of my healthy recipes. So I don’t have to feel bad about eating something I love. Collecting delicious healthy recipes is something I have had a passion for. You don’t have to eat bland food or the same thing all the time to eat healthily. Stick around I will be sharing a lot more delicious healthy meals.

What you need

 

sweet potatoes
olive oil
chipotle chilies in adobo sauce (minced)
crushed garlic
honey
apple cider vinegar
salt
cumin
chicken breast

 

How to make it

 

Preheat oven to 400 degrees. Chop up the sweet potatoes

In a medium bowl mix up the sweet potatoes and olive oil. Bake for 20 minutes

In a small bowl, mix the chilies, garlic, honey, vinegar, salt, and cumin. smother the mixture all over each chicken breast. When the sweet potatoes are done place the chicken breast on top and roast for another 30 minutes.

Garnish with Cilantro, Green onion, red pepper flakes

 

INGREDIENTS

  • 4 sweet potatoes (Diced)
  • 2 1/2 tbs olive oil
  • 4 chipotle chilies in adobo sauce, minced
  • 2 garlic cloves, minced
  • 2 tbs honey
  • 2 tsp apple cider vinegar
  • 1 1/4 tsp salt, plus additional to taste
  • 1 tsp cumin
  • 4 chicken breasts

INSTRUCTIONS

    1. Preheat the oven to 400 degrees.
    2. In a medium bowl, toss the sweet potatoes in the olive oil and scatter on the bottom of a roasting pan.
    3. Roast for 15 minutes.
    4. In a small bowl, mix together the chilies, garlic, honey, vinegar, salt, and cumin. Rub the paste evenly over each breast.
    5. Place the chicken breasts on top of the sweet potatoes and roast until the chicken is just cooked through, about 25 to 30 minutes.
    6. Serve garnished with cilantro if desired
