Cauliflower Hamburger Casserole

CAULIFLOWER HAMBURGER CASSEROLE

Easy healthy ground beef and cauliflower recipe made with fresh herbs and spices, sweet coconut milk, and toasted almonds.

Cauliflower is being used more and more in recipes lately. It can be used in many different ways. Today I have a scrumptious casserole with ground beef, spices, and almonds.

WHAT YOU NEED

carrots
cauliflower
minced garlic
sweet onion
ground beef
cumin
paprika
oregano
thyme
salt
pepper
parmesan cheese
coconut milk
bouillon cube
eggs
sliced almonds

 

HOW TO MAKE IT

Preheat oven to 350F. In a mixing bowl add 1 cup water and 1 bouillon cube. Cut the cauliflower and carrots into even small pieces.

Place the chopped veggies in a large bowl and add 1 tbsp olive oil, mix well.

Layer on a baking sheet and bake for 20 minutes.

Remove from the oven and set aside. Heat a large pan on medium heat and brown the ground beef chopping with a meat chopper. add the chopped onion and minced garlic. Season with the salt, pepper, cumin, paprika, thyme, and oregano.

Continue cooking and breaking up the meat with a meat chopper. In a chicken broth bowl mix the eggs, coconut milk, and parmesan cheese.

Mix the cauliflower in with the ground beef and pour it into a baking dish.

Pour the egg mixture over top and spread evenly.

Bake for 30 minutes. Add the sliced almonds and broil for 2 minutes. Serve and enjoy.

  • 1 bouillon cube
  • 1 cup water
  • 1 head cauliflower
  • 1 lb ground beef
  • 1/2 cup sweet onion (chopped)
  • 2 tsp minced garlic
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp fresh oregano
  • 1 tsp thyme
  • 1 cup coconut milk
  • 2 eggs
  • 1/4 cup parmesan cheese
  • 1/4 cup sliced almonds

Instructions
 

  • preheat oven to 350F
  • Add 1 bouillon cube and 1 cup water to a mixing bowl
  • Cut the cauliflower and carrots into small pieces

  • bake in the oven for 20 minutes
  • heat pan on medium and add the ground beef breaking up with a meat chopper
  • season with the salt, pepper, cumin, paprika, thyme, and oregano
  • continue breaking up with the meat chopper
  • in the bowl with the chicken broth add the eggs, coconut milk, and parmesan cheese and mix well
  • mix the hamburger and cauliflower together and add to a baking dish
  • Pour egg mixture over top and spread evenly
  • bake for 30 minutes
  • add the sliced almonds and broil for 2 minutes
  • serve and enjoy
