Balsamic Salmon & Salad

BALSAMIC SALMON & SALAD

Fresh salmon in a teriyaki marinade broiled to a golden crust and served with a salad of mixed greens and fresh herbs tossed with a balsamic vinegar dressing and steamed new potatoes.

This delicious teriyaki salmon is so good. Broiled until you get that nice charred crust on top. Yummy Yum Yum.

 

WHAT YOU NEED

new potatoes
teriyaki marinade
minced garlic
parsley
salmon fillets
mixed salad greens
fresh basil
fresh oregano
olive oil
balsamic vinegar
lemon
black pepper
salt

 

HOW TO MAKE IT

Preheat broiler. Steam cubed new potatoes in a covered saucepan until tender, approximately 20 minutes.

While potatoes are cooking, mix teriyaki marinade, garlic, and parsley in a small bowl. Lightly spray a broiler pan with cooking spray. Place salmon fillets on the pan, skin-side down, and brush with teriyaki marinade.

Broil salmon approximately 6 inches from the broiler until the fish is cooked through and flakes easily with a fork, about 10 minutes.

While salmon is cooking, combine salad greens, basil, oregano, olive oil, and balsamic vinegar in a medium bowl and toss.

Divide tossed salad between 4 separate plates. Layer portions of potatoes and broiled salmon fillets over salad greens. Top salmon and salad with a squeeze of fresh lemon and freshly ground black pepper. serve, and enjoy!

Ingredients
  

  • 1.5 lb new potatoes (cubed)
  • 2 tbsp teriyaki marinade
  • 4 tsp minced garlic
  • 2 tbsp fresh parsley (minced)
  • 4 salmon fillets
  • 8 cups mixed salad greens
  • 2 tbsp fresh basil (chopped)
  • 2 tbsp fresh oregano (chopped)
  • 2 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • 1 lemon

Instructions
 

  • Preheat broiler.
  • Steam cubed new potatoes in a covered saucepan until tender.
  • Mix teriyaki marinade, garlic, and parsley in a small bowl.
  • Lightly spray a broiler pan with cooking spray.
  • Place salmon fillets on the pan, skin-side down, and brush with the teriyaki marinade.
  • Broil salmon 6 inches from the top for 10 minutes or until it flakes easily with a fork.
  • Combine the salad greens, basil, oregano, olive oil, and balsamic vinegar in a medium bowl and toss.
  • Divide tossed salad between 4 sperate plates, Place a broiled salmon fillets over the top, and spread some new potatoes around.
  • Top the salmon and salad with a squeeze of fresh lemon, black pepper, and salt.
  • Serve and enjoy.
