Baked Chicken Parmesan

BAKED CHICKEN PARMESAN

Tender chicken breast breaded with Italian breadcrumbs and parmesan cheese baked with mozzarella on top served with fettuccine on a bed of baby spinach topped with marinara sauce.

This healthy version of chicken parmesan is easy to make and so yummy.

 

WHAT YOU NEED

egg whites
Italian breadcrumbs
parmesan cheese
chicken breast
fettuccine
marinara sauce
baby spinach
mozzarella cheese

 

HOW TO MAKE IT

Preheat oven to 400 degrees. Cook pasta according to package directions. Pound the chicken to thin it out a bit and soften it up.

Beat egg whites with a fork in a medium bowl. Mix breadcrumbs & Parmesan in a pie plate.

Dip chicken breasts in egg whites, then in breadcrumb mixture coating well.

Place chicken on a parchment-lined baking sheet. bake for approximately 12 to 15 minutes, turn over and bake an additional 12 to 15 minutes, until chicken reaches an internal temp of 165, or is no longer pink in the center. Add mozzarella cheese to the top of each chicken breast and let melt in the oven.

Warm pasta sauce in a small saucepan over medium-low heat. Divide spinach leaves between 4 plates. Layer warm pasta, sauce, and chicken breast.

Garnish with parsley and serve.

  • 2 egg whites

  • 4 tbsp parmesan cheese
  • 4 chicken breast
  • 8 oz fettuccine (uncooked)
  • 1 jar marinara sauce
  • 2 cups baby spinach
  • 1/2 cup low-fat mozzarella cheese

  • Add mozzarella cheese to the top of each chicken breast and let melt in the oven.
  • Warm the marinara sauce in s small saucepan over medium heat.
  • Divide spinach leaves between 4 plates.
  • Layer warm pasta, sauce, and chicken breast.
  • Garnish with parsley and serve.
