One of the hardest parts of being on keto is giving up pasta — and I truly love pasta. There’s something so comforting about a big plate of noodles smothered in a rich, savory sauce. Italian food has always been one of my absolute favorite cuisines, so finding satisfying low-carb alternatives has been an ongoing adventure in my kitchen. After trying several options, these zucchini noodles have become one of my go-to substitutes. They’re light, tender, and soak up the rich, meaty sauce beautifully while keeping the entire meal fully keto-friendly.
I use this vegetable spiralizer I got off Amazon, and it works great. It makes quick work of turning fresh zucchini into long, pasta-like strands that hold up perfectly under a hearty sauce. This meat sauce itself is loaded with ground beef, crispy bacon, aromatic Italian herbs, a splash of red wine, and a touch of cream for richness. It’s deeply flavorful, comforting, and tastes just like a classic Italian sauce — only without the carbs.

 

Ingredients You’ll Need (The Quest Inventory)

  • 2 tbsp olive oil
  • 6 slices bacon, cooked and chopped
  • 1 lb ground beef
  • 2 celery stalks, finely chopped
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ⅛ tsp red pepper flakes
  • 1 tsp sea salt (plus more to taste)
  • ½ tsp black pepper
  • 3 tbsp red cooking wine
  • 14 oz petite diced tomatoes with juice
  • ¼ cup heavy cream
  • 1½ tsp red wine vinegar
  • 2 large zucchinis
  • ½ cup grated Parmesan cheese

 

How to Forge the Feast (The Quest Steps)

    • 1. Heat the olive oil in a large pan or pot over medium heat.
    • 2. Add the ground beef and cook, breaking it into crumbles, until browned.
    • 3. Cook the bacon (in the air fryer, skillet, or oven) until crispy, then chop and set aside.
    • 4. Add the chopped celery, onion powder, garlic powder, oregano, basil, red pepper flakes, salt, and pepper to the beef. Cook, stirring often, for 3–4 minutes.
    • 5. Pour in the red wine and stir, scraping up any browned bits from the bottom of the pan.
    • 6. Stir in the diced tomatoes with their juice. Cover and simmer for 10 minutes.
    • 7. Uncover and continue cooking, stirring occasionally, until the sauce thickens (about 20 minutes).
    • 8. Stir in the heavy cream and simmer for another 5 minutes.
    • 9. Add the red wine vinegar and the chopped bacon. Taste and adjust seasoning with additional salt and pepper if needed.
    • 10. While the sauce finishes, spiralize the zucchinis into noodles. Place them in a microwave-safe bowl, season with a pinch of salt and pepper, cover, and microwave for 1 minute. Stir and microwave for another 1 minute until just tender.
    • 11. Divide the zucchini noodles between plates, top with the meat sauce, and sprinkle generously with Parmesan cheese. Serve immediately.
