Ingredients
- 2 egg whites
- 1/3 cup Italian breadcrumbs
- 4 tbsp parmesan cheese
- 4 chicken breast
- 8 oz fettuccine (uncooked)
- 1 jar marinara sauce
- 2 cups baby spinach
- 1/2 cup low-fat mozzarella cheese
Instructions
- Preheat oven to 400 degrees.
- Cook pasta according to package directions.
- Pound the chicken to thin it out a bit and soften it up.
- Beat egg whites with a fork in a medium bowl.
- Mix breadcrumbs and parmesan in a pie plate.
- Dip chicken breast in egg whites, then in breadcrumb mixture coating well.
- Place chicken on a parchment-lined baking sheet.
- Bake for 12 minutes, turn and bake another 12 minutes until done.
- Add mozzarella cheese to the top of each chicken breast and let melt in the oven.
- Warm the marinara sauce in s small saucepan over medium heat.
- Divide spinach leaves between 4 plates.
