Baked Chicken Parmesan

Tender chicken breasts cloaked in Italian breadcrumbs and Parmesan, baked to golden perfection with a crown of melted mozzarella, served atop fettuccine nestled on a bed of baby spinach, all drizzled with my Spicy Homemade Marinara Sauce

Ingredients
  

  • 2 egg whites
  • 1/3 cup Italian breadcrumbs
  • 4 tbsp parmesan cheese
  • 4 chicken breast
  • 8 oz fettuccine (uncooked)
  • 1 jar marinara sauce
  • 2 cups baby spinach
  • 1/2 cup low-fat mozzarella cheese

Instructions
 

  • Preheat oven to 400 degrees.
  • Cook pasta according to package directions.
  • Pound the chicken to thin it out a bit and soften it up.
  • Beat egg whites with a fork in a medium bowl.
  • Mix breadcrumbs and parmesan in a pie plate.
  • Dip chicken breast in egg whites, then in breadcrumb mixture coating well.
  • Place chicken on a parchment-lined baking sheet.
  • Bake for 12 minutes, turn and bake another 12 minutes until done.
  • Add mozzarella cheese to the top of each chicken breast and let melt in the oven.
  • Warm the marinara sauce in s small saucepan over medium heat.
  • Divide spinach leaves between 4 plates.
  • Layer warm pasta, sauce, and chicken breast.
  • Garnish with parsley and serve.
