Preheat oven to 400 degrees.
Cook pasta according to package directions.
Pound the chicken to thin it out a bit and soften it up.
Beat egg whites with a fork in a medium bowl.
Mix breadcrumbs and parmesan in a pie plate.
Dip chicken breast in egg whites, then in breadcrumb mixture coating well.
Place chicken on a parchment-lined baking sheet.
Bake for 12 minutes, turn and bake another 12 minutes until done.
Add mozzarella cheese to the top of each chicken breast and let melt in the oven.
Warm the marinara sauce in s small saucepan over medium heat.
Divide spinach leaves between 4 plates.
Layer warm pasta, sauce, and chicken breast.
Garnish with parsley and serve.
