Tilapia Manicotti Bundles
TILAPIA MANICOTTI BUNDLES
Seared tilapia cream cheese filling rolled up inside a lasagna noodles tied with carrot strips and covered in mozzarella cheese green onion, and fresh dill then baked to golden deliciousness.
This easy manicotti recipe is a healthy spin on the normal manicotti bundles. the tilapia and cream cheese filling I could just sit down and eat with a fork. Roll it up inside a lasagna noodle and cover it in mozzarella cheese. Yum! Using lasagna noodles is easier than trying to stuff a regular roll, and the presentation is beautiful.

lasagna noodles
green onions
carrot
olive oil
light cream cheese
skim milk
dried dill
salt
pepper
reduced-fat mozzarella cheese
fresh dill
HOW TO MAKE IT
Preheat oven to 350 degrees. Prepare lasagna noodles according to instructions. Lightly mist a glass pan with cooking spray and set aside. Dice the green onions. Peel the carrot into strips and set aside.
In a large nonstick pan, over medium heat, add oil. Add tilapia cover and cook for 3 minutes then flip and cook for a minute more or until fish is no longer opaque.
Season with salt and pepper and remove from heat. In a medium saucepan mix cream cheese together with milk, dill, and salt. Whisk constantly until the mixture is melted and creamy.
Add half of the mozzarella and mix well. Stir in the tilapia and remove from heat.
Lay lasagna noodles out on a countertop, place 2 tbsp of the mixture at the bottom of the noodle.
Roll away from you. Make a bundle that stays together without squeezing out the filling. Tie each bundle with a peeled carrot strip and place it in the pan.
Place remaining mozzarella over bundles.
Top with dill and bake for 10 minutes.
Turn to broil and broil for 3 minutes to brown the cheese.
Garnish with green onion, diced carrots, and fresh dill.

- 16 oz tilapia fillets
- 10 lasagna noodles
- 3 green onions (sliced)
- 1 carrot (peeled)
- 1 tsp olive oil
- 4 oz light cream cheese
- 1/2 cup skim milk
- 1/2 tsp dried dill
- 1/2 tsp salt
- 8 oz reduced-fat mozzarella
- fresh dill for garnish
Instructions
- Preheat oven to 350 degrees.

- Lightly mist a glass pan with cooking spray and set aside.
- Dice the green onions and peel the carrots into strips and set aside.
- Add oil to a large nonstick pan, over medium heat.
- Add tilapia cover and cook for 3 minutes per side until no longer opaque.
- Season with salt and pepper and remove from heat.
- In a medium saucepan mix cream cheese together with milk, dill and salt.
- Add half the mozzarella cheese and mix well.
- Combine in the tilapia and remove from heat.
- Lay lasagna noodles out flat and place 2 tbsp of mixture at the end and carefully roll away from you.
- Tie each bundle with a peeled carrot strip and place in the baking dish.
- Use the remaining mozzarella over top of the bundles and top with dill and bake for 10 minutes.
- Turn to broil and broil for 3 minutes to brown the cheese.
