STUFFED PEPPER CASSEROLE

Delicious one-pot meal. Seasoned ground beef with sauteed onion, peppers, and Rice with melted cheddar cheese.

This healthy meal has all the flavors of a classic stuffed pepper mixed together in this cheesy melty spicy unstuffed pepper casserole. This one-pot meal is so yummy it’s hard to stop eating.

 

WHAT YOU NEED

lean ground beef
yellow onion
minced garlic
red bell pepper
orange bell pepper
yellow bell pepper
diced jalapeno
jalapeno salt
salt
pepper
diced tomatoes
beef bouillon cubes
water
tomato sauce
Italian seasoning
brown rice
reduced-fat cheddar cheese

 

HOW TO MAKE IT

Diced the bell peppers, onion, and jalapeno. Heat a large pot over medium heat. Add the onions, bell pepper, jalapeno, and garlic. Saute for 5 minutes.

Add the ground beef and cook for about 5–7 minutes, breaking into small pieces as the beef browns.

Add salt, jalapeno salt, and pepper and cook for about 5-7 more minutes, until peppers have started to soften. Reduce heat to medium and add in tomatoes with juice, broth, tomato sauce, soy sauce, and Italian seasoning.

Bring mixture to a boil. Now add in your uncooked rice. Return to a boil, and reduce heat to low. Cover and simmer for 25 minutes, until rice is tender. Remove from heat and sprinkle with shredded cheese.

Serve and enjoy.

  • 1 lb lean ground beef
  • 1/2 yellow onion
  • 3 tsp minced garlic
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 2 tbsp minced jalapeno
  • 1/4 tsp jalapeno salt
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 14 oz diced tomatoes (with juices)
  • 2 beef bouillon cubes
  • 2 cups water
  • 8 oz tomato sauce
  • 1 tsp Italian seasoning
  • 1 cup brown rice (uncooked)
  • 1 1/2 cup reduced-fat cheddar cheese (shredded)

Instructions
