Chicken Pomodoro

 

This healthy chicken Pomodoro I have been cooking for about 20 years. It’s super simple and tasty too. You can easily trade out the whole wheat pasta for your favorite pasta. I don’t always use wheat myself. The breading on the chicken and the sauteed veggies is what makes this so yummy.

 

what you need

chicken tenderloins
grated parmesan cheese
eggs
tomato basil garlic seasoning
olive oil
tomatoes
yellow bell pepper
Italian seasoning
salt
pepper
minced garlic
Basil

 

how to make it

preheat oven to 350 degrees. place a sautee pan on medium heat. Dice the tomatoes and bell pepper. Add to the pan. Add the garlic, Italian seasoning, salt, pepper and basil to the pan. Sautee stirring often.

Start boiling water for your pasta. In a pie pan mix up the egg whites in one, and the other mix the parmesan cheese and tomato basil garlic seasoning. Dredge the chicken in the egg whites and then the seasoning. Place on a baking sheet. bake in the oven for 20 minutes.

Start cooking your pasta according to package directions. continue sauteing veggies. Add a little chicken broth if needed. plate the pasta, Sauce, and Chicken.

INGREDIENTS

  • 8 oz uncooked whole-wheat pasta
  • 2 egg whites
  • 2 tbsp Mrs. Dash Tomato-basil-garlic seasoning
  • 1/2 C Reduced fat parmesan cheese, grated
  • 1 lb chicken tenderloins
  • 2 tbs olive oil
  • 4 fresh tomatoes (diced)
  • 1 orange pepper (diced)
  • 1 yellow pepper (diced)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning
  • 4 TBSP Chicken Broth
  • 1 tsp basil

INSTRUCTIONS

    1. Preheat oven to 350 degrees
    2. Dice the tomatoes and bell pepper
    3. place a sautee pan on medium heat
    4. Add the olive oil, tomatoes, bell pepper, Minced garlic, Italian seasoning, salt, pepper and basil to the pan.
    5. Start boiling water for the pasta
    6. in a pie plate, lightly beat the egg whites. In a pie plate, combine the Mrs. Dash and parmesan cheese. Dip chicken breast in egg whites then into the seasoned parmesan, coating both sides of the chicken breast.
    7. Place chicken on a baking sheet.
    8. Bake in the oven for 20 minutes. 
    9. Cook the pasta
    10. Continue sauteing the veggies. Add a little chicken broth if needed.
    11. Slice cooked chicken and serve over pasta. Makes 4 servings

NOTES

You can use any kind of pasta you like. You don’t have to use the whole-wheat.
