CAJUN CHICKEN PASTA

Easy and flavorful Cajun Chicken Pasta. Seasoned Chicken breast, sauteed mushrooms, and spinach tossed with pasta and more seasoning topped with diced tomatoes. It’s packed with deliciousness and easy on calories as well.

This is another recipe that I have used for years. It’s so yummy, and I can have it without worrying about breaking my calorie budget for the day. The biggest secret is using Butter buds. They are packed with the butter flavor we all know and love but without all the bad stuff. They are fat and cholesterol-free concentrated butter-flavored granules that can be used in place of butter, margarine or oil. Butter Buds are available in granulated sprinkles in a convenient shaker bottle.

 

WHAT YOU NEED

chicken breast
cajun seasoning
mushrooms
baby spinach
tomatoes
rotini pasta
butter buds
slim milk

 

HOW TO MAKE IT

Boil water for pasta. Cook pasta according to package directions. Heat a skillet to medium heat. Coat the pan with cooking spray. Season the chicken with 1 tbsp cajun seasoning. Place the chicken in the pan and cook for 6 minutes per side. or until it’s not pink in the center.

Transfer to a plate and cover to keep warm. Chope the mushrooms and tomatoes.

Add milk spinach, mushrooms, butter buds, the remaining cajun seasoning, and cooked pasta to the pan mix well.

Add the spinach cover and simmer stirring often until heated through.

remove from pan and fold in the diced tomatoes.

Divide into separate bowls and place chicken breast on top. Garnish with parsley and parmesan cheese.

Ingredients
  

  • 4 chicken breast
  • 2 tbsp cajun seasoning
  • 1 tbsp butter buds
  • 8 oz mushrooms
  • 1 package baby spinach
  • 8 oz rotini pasta
  • 1/2 cup skim milk
  • 2 tomatoes

Instructions
 

  • Heat pot on high
  • cook pasta according to package directions
  • lightly coat a large skillet with cooking spray and turn on medium heat
  • season chicken breast with 1 tbsp of the cajun seasoning
  • Place chicken breast in the skillet. Cook for 6 minutes per side until lo longer pink in the center
  • transfer to a plate and cover to keep warm
  • chop the mushrooms and tomatoes
  • in the skillet add milk, mushrooms, butter buds, cooked pasta and the rest of the cajun seasoning mix well
  • add the spinach cover and let simmer over low heat, stirring often, until heated through
  • remove from heat and fold in diced tomatoes
  • to plate add pasta mixture to a plate and chicken breast garnish with parsley and parmesan cheese
