Hello, my fellow foodie adventurers!

Today’s quest is a creamy, comforting classic: Keto Creamed Spinach. This is one of those perfect side dishes that elevates any meal. Whether you’re serving it alongside a juicy steak, roasted chicken, or even a simple weeknight protein, this creamed spinach brings rich, luxurious flavor and a big boost of nutrition. I served it with my  Steak W/Red Wine Mushroom Gravy. Spinach is loaded with vitamins A, C, K, and iron, but eating it plain every day can get boring. This version transforms it into a velvety, garlicky, cheesy delight that you’ll actually look forward to eating.

Ingredients You’ll Need (The Quest Inventory)

  • 3 tbsp unsalted butter
  • 4 tsp minced garlic
  • 10 oz baby spinach
  • ½ cup heavy cream
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: freshly grated Parmesan cheese for topping

How to Forge the Feast (The Quest Steps)

  • 1. Heat the butter in a large skillet over medium heat.
  • 2. Add the minced garlic and sauté for about 1 minute until fragrant.
  • 3. Add the baby spinach. Sauté for 2 minutes, then cover for another 1–2 minutes to help wilt the spinach.
  • 4. Stir in the heavy cream, cream cheese, Italian seasoning, salt, and black pepper.
  • 5. Continue stirring until the cream cheese is fully melted and the sauce begins to thicken (about 3 minutes). The sauce will thicken further as it cools slightly.
  • 6. Remove from heat. Taste and adjust seasoning if needed.
  • 7. Serve hot, sprinkled with grated Parmesan if desired.

Tips Tricks & Tasty Variations

Cooking Tips:

  • Don’t overcook the spinach — it should be wilted but still bright green.
  • For a thicker sauce, let it simmer a little longer or add an extra ounce of cream cheese.
  • Make ahead: This reheats beautifully. Just add a splash of cream when warming.
  • Broil in the over for a few minutes to give the cheese that golden color for great presentation.

Tasty Variations:

  • Add crispy bacon bits for a smoky twist.
  • Stir in sautéed mushrooms for extra earthiness.
  • Make it spicy with a pinch of red pepper flakes or cayenne.
  • Swap Italian seasoning for fresh thyme or nutmeg for a different flavor profile.

This Keto Creamed Spinach is rich, satisfying, and so easy you’ll find yourself making it on repeat. It’s the perfect way to get more greens into your diet without sacrificing flavor. Tag me when you make it — I want to see that creamy goodness next to your steak!
