A rich, velvety, and garlicky side dish that transforms simple spinach into a luxurious treat. Fresh baby spinach is sautéed in butter and garlic, then simmered in a creamy sauce made with heavy cream and cream cheese, seasoned with Italian herbs. Ready in under 15 minutes, this low-carb classic pairs perfectly with steak, chicken, or any main dish.

Ingredients
  

  • 3 tbsp unsalted butter
  • 4 tsp minced garlic
  • 10 oz baby spinach
  • 1/2 cup heavy cream
  • 2 oz cream cheese softened
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • parmesan cheese optional

Instructions
 

  • Heat the butter in a large skillet over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the baby spinach. Sauté for 2 minutes, then cover for another 1–2 minutes to help wilt the spinach.
  • Stir in the heavy cream, cream cheese, Italian seasoning, salt, and black pepper.
  • Continue stirring until the cream cheese is fully melted and the sauce begins to thicken (about 3 minutes). The sauce will thicken further as it cools slightly.
  • Remove from heat. Taste and adjust seasoning if needed.
  • Serve hot, sprinkled with grated Parmesan if desired.
