A rich, velvety, and garlicky side dish that transforms simple spinach into a luxurious treat. Fresh baby spinach is sautéed in butter and garlic, then simmered in a creamy sauce made with heavy cream and cream cheese, seasoned with Italian herbs. Ready in under 15 minutes, this low-carb classic pairs perfectly with steak, chicken, or any main dish.
- 3 tbsp unsalted butter
- 4 tsp minced garlic
- 10 oz baby spinach
- 1/2 cup heavy cream
- 2 oz cream cheese softened
- 1 tsp Italian seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
- parmesan cheese optional
Heat the butter in a large skillet over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant.
Add the baby spinach. Sauté for 2 minutes, then cover for another 1–2 minutes to help wilt the spinach.
Stir in the heavy cream, cream cheese, Italian seasoning, salt, and black pepper.
Continue stirring until the cream cheese is fully melted and the sauce begins to thicken (about 3 minutes). The sauce will thicken further as it cools slightly.
Remove from heat. Taste and adjust seasoning if needed.
Serve hot, sprinkled with grated Parmesan if desired.
