Pad Thai Chicken Meatballs

PAD THAI CHICKEN MEATBALLS

Thai inspired chicken meatballs baked and drowned in a delicious creamy peanut sauce served over white rice.

I love Thai food. Of course, I love all food but especially spicy full-flavored dishes. Red curry is one of my favorite ingredients. The thought of mixing red curry, peanut butter, and coconut milk in the same bowl does sound kind of strange. But, it’s very delicious.

 

WHAT YOU NEED

ground chicken
green onions
cilantro
fish sauce
red curry paste
breadcrumbs
egg
salt
pepper
sesame oil
coconut milk
peanut butter
brown sugar
red chili flakes

 

HOW TO MAKE IT

Preheat oven to 375 F degrees. Place parchment paper over a baking sheet. Cook rice according to package directions. In a medium bowl mix all the ingredients for the meatballs together well.

Form the meatballs into small 1 inch balls. Place meatballs on the prepared baking sheet.

Bake for about 30 minutes or until done.

Heat the oil in a medium saucepan or skillet. Add the red curry paste and cook for a couple of minutes.

Add the remaining ingredients, stir and cook for about 5 minutes.

Add meatballs to the sauce and toss so that the meatballs are fully coated.

Garnish with parsley or cilantro. Serve over the white rice.

Ingredients
  

  • 2 cups white rice (uncooked)

Meatballs

  • 1 lb ground chicken
  • 4 green onions (chopped)
  • 1/4 cup cilantro (chopped)
  • 1 tbsp fish sauce
  • 1 tbsp red curry paste
  • 1 cup breadcrumbs
  • 1 egg
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Peanut sauce

  • 1 tbsp sesame oil
  • 13 oz coconut milk
  • 1 tbsp red curry paste
  • 2 tbsp peanut butter (creamy)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp brown sugar
  • 1/2 tsp chili pepper flakes

Instructions
 

  • Preheat oven to 375 degrees.
  • Line a baking sheet with parchment paper.
  • Cook rice according to package directions.
  • In a medium bowl mix all the ingredients for the meatballs together.
  • Mix well and form 1 inch meatballs.
  • Place the meatballs on the prepared baking sheet and bake for 30 minutes.
  • Heat the oil in a medium saucepan.
  • Add the red curry paste and cook for 2 minutes.
  • Add the remaining ingredients, stir and cook for 5 minutes.
  • Add meatballs to the sauce and toss so that the meatballs are fully coated.
  • Serve over the white rice.
  • Garnish with chopped parsley and red pepper flakes.
