Preheat oven to 375 degrees.
Line a baking sheet with parchment paper.
Cook rice according to package directions.
In a medium bowl mix all the ingredients for the meatballs together.
Mix well and form 1 inch meatballs.
Place the meatballs on the prepared baking sheet and bake for 30 minutes.
Heat the oil in a medium saucepan.
Add the red curry paste and cook for 2 minutes.
Add the remaining ingredients, stir and cook for 5 minutes.
Add meatballs to the sauce and toss so that the meatballs are fully coated.
Serve over the white rice.
Garnish with chopped parsley and red pepper flakes.
