Ingredients
  

  • cooking spray
  • 1 lb turkey sausage
  • 1 red bell pepper (diced)
  • 1/2 sweet onion (diced)
  • 4 oz baby spinach
  • 1/2 tsp jalapeno salt
  • 1/2 tsp ground red pepper
  • 8 oz eggbeaters
  • 6 wheat wraps
  • 1 cup reduced-fat cheddar cheese
  • 1/2 cup salsa

Instructions
 

  • Preheat oven on broil
  • Heat large skillet to medium heat with cooking spray
  • Slice the bell pepper and onions
  • Sautee the onion, spinach, and bell peppers
  • Season with the jalapeno salt and ground red pepper
  • Add the turkey sausage and brown separating with a meat chopper.
  • Add the eggbeaters and fold into the mixture scrapping the sides so the eggs don’t stick until the eggs are done
  • Add the cheese and mix well.
  • Evenly distribute between 6 wheat wraps
  • Wrap well and place on a baking sheet
  • Broil in the oven for 1 minute.
  • Cut in half and spread salsa over top
  • Serve and enjoy
