Preheat oven to 350 F
Heat oil in a large skillet over medium heat
Chop the onions and add to the skillet
Thaw and drain the chopped spinach
Sautee onion until soft
Add the spinach to the onions and continue cooking until moisture has evaporated
In a large mixing bowl add eggs, cheese, salt, black pepper, and red pepper, Mix well
Add the onion and spinach to the bowl and fold together
Evenly distribute mixture into the two pie crust
Bake for about 30 minutes. Or until eggs of set
Let cool for 10 minutes before cutting
