Preheat ove to 350 degrees.
cut bacon into small pieces
In a pot cook the bacon until crispy, stirring often to id doesnt stick.
In a large mixing bowl combine the hashbrowns, salt, pepper, creole seasoning, onions, bell pepper, jalapeno and half the cheese.
Add the bacon along with the bacon grease to the bowl and mix well.
Lightly spray a large baking dish with cooking spray.
Pour the hashbrown mixture into the pan and spread out evenly.
In the same bowl beat the eggs and milk together.
Pour egg mixture over the casserole.
Top with the remaining cheese.
Season with more salt and pepper if desired.
Cook uncovered for 30 minutes. or until golden brown.
Serve and enjoy with some fruit and coffee.
