Hash brown Breakfast Casserole

Ingredients
  

  • 32 oz frozen hashbrowns
  • 1 lb bacon
  • 1 sweet onion (diced)
  • 8 oz cheddar cheese (shredded)
  • 1 red bell pepper (diced)
  • 1 tbsp diced jalapeno
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tbsp creole seasoning
  • 12 eggs
  • 1 cup milk

Instructions
 

  • Preheat ove to 350 degrees.
  • cut bacon into small pieces
  • In a pot cook the bacon until crispy, stirring often to id doesnt stick.
  • In a large mixing bowl combine the hashbrowns, salt, pepper, creole seasoning, onions, bell pepper, jalapeno and half the cheese.
  • Add the bacon along with the bacon grease to the bowl and mix well.
  • Lightly spray a large baking dish with cooking spray.
  • Pour the hashbrown mixture into the pan and spread out evenly.
  • In the same bowl beat the eggs and milk together.
  • Pour egg mixture over the casserole.
  • Top with the remaining cheese.
  • Season with more salt and pepper if desired.
  • Cook uncovered for 30 minutes. or until golden brown.
  • Serve and enjoy with some fruit and coffee.
