Ingredients
  

  • 4 Sweet Potatoes Cubed
  • 4 Chicken Breasts

Chipotle Glaze

  • 2 1/2 Tbsp. Olive Oil
  • 1 can Chipotle Peppers in Adobo Sauce Minced
  • 4 Tbsp. Honey
  • 4 Tsp. Apple Cider Vinegar
  • 2 Tsp. Salt
  • 2 Tsp. Cumin

Instructions
 

  • Preheat the oven to 400 degrees
  • Cube the sweet potatoes and toss them in a medium bowel with some olive oil and salt.
  • Scatter them out evenly on a baking sheet.
  • Roast for about 15 minutes.
  • In a small bowel, mix together the chipotle peppers, garlic, vinegar, salt, and cumin to make the glaze. Reserve half the glaze to serve with the meal.
  • Cut the chicken breast in half and slather them with half the chipotle glaze.
  • Place in chicken on top of the sweet potatoes and roast until the chicken is just cooked through, about 25 minutes.
  • Serve and enjoy.
