- 4 Sweet Potatoes Cubed
- 4 Chicken Breasts
Chipotle Glaze
- 2 1/2 Tbsp. Olive Oil
- 1 can Chipotle Peppers in Adobo Sauce Minced
- 4 Tbsp. Honey
- 4 Tsp. Apple Cider Vinegar
- 2 Tsp. Salt
- 2 Tsp. Cumin
Preheat the oven to 400 degrees
Cube the sweet potatoes and toss them in a medium bowel with some olive oil and salt.
Scatter them out evenly on a baking sheet.
Roast for about 15 minutes.
In a small bowel, mix together the chipotle peppers, garlic, vinegar, salt, and cumin to make the glaze. Reserve half the glaze to serve with the meal.
Cut the chicken breast in half and slather them with half the chipotle glaze.
Place in chicken on top of the sweet potatoes and roast until the chicken is just cooked through, about 25 minutes.
