Fresh salmon bathed in a teriyaki marinade, broiled to a golden, charred crust, then perched atop a lively salad of mixed greens and fragrant herbs, all tossed in a tangy balsamic dressing. Served with tender steamed new potatoes

Ingredients
  

  • 1.5 lb new potatoes (cubed)
  • 2 tbsp teriyaki marinade
  • 4 tsp minced garlic
  • 2 tbsp fresh parsley (minced)
  • 4 salmon fillets
  • 8 cups mixed salad greens
  • 2 tbsp fresh basil (chopped)
  • 2 tbsp fresh oregano (chopped)
  • 2 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • 1 lemon

Instructions
 

  • Preheat broiler.
  • Steam cubed new potatoes in a covered saucepan until tender.
  • Mix teriyaki marinade, garlic, and parsley in a small bowl.
  • Lightly spray a broiler pan with cooking spray.
  • Place salmon fillets on the pan, skin-side down, and brush with the teriyaki marinade.
  • Broil salmon 6 inches from the top for 10 minutes or until it flakes easily with a fork.
  • Combine the salad greens, basil, oregano, olive oil, and balsamic vinegar in a medium bowl and toss.
  • Divide tossed salad between 4 sperate plates, Place a broiled salmon fillets over the top, and spread some new potatoes around.
  • Top the salmon and salad with a squeeze of fresh lemon, black pepper, and salt.
  • Serve and enjoy.
