Poblana Pico Grilled Cheese

POBLANO PICO GRILLED CHEESE

Spicy, melty grilled cheese made with poblano peppers, onions, garlic tomatoes, and cilantro sauteed together and pilled on buttered bread with monetary jack cheese and grilled to a golden crispy crust.

I think I’m on to something here. I was thinking… What the heck am I going to make for dinner tonight? I remembered that I had a couple of poblano peppers hanging out in the fridge. I thought that would make a killer grilled cheese. It was delicious, but I think next time I will add some roast beef or some fajita meat. Doing what I can with the groceries I have left. I told you my blog was gonna get crazy, lol

 

WHAT YOU NEED

poblano peppers
sweet onion
tomatoes
minced garlic
cilantro
Monterey jack cheese
butter
bread

HOW TO MAKE IT

Diced the peppers, onions, and cilantro set aside. Heat nonstick skillet on medium heat. Add the veggies, salt, and pepper and saute for 15 minutes stirring often.

Heat griddle to 350 degrees. Butter the bread on one side and set aside. Shred the cheese. Place a piece of bread on the hot griddle butter side down. Pile cheese

more cheese, and bread butter side up on top.

Cook for 3 minutes or until golden brown.

Flip and cook for another 3 minutes.

Ingredients
  

  • 2 poblano peppers
  • 1/2 cup sweet onions (diced)
  • 2 tomatoes (diced)
  • 2 tbsp cilantro (chopped)
  • 8 oz monteray jack cheese (shredded)
  • 10 pieces bread
  • 5 tbsp butter
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Instructions
 

  • Dice the peppers, onions, and cilantro and set aside.
  • Heat a nonstick skillet on medium heat.
  • Add the veggies, salt, and pepper and sauteed for 15 minutes stirring often.
  • Heat griddle to 350 degrees.
  • Butter each slice of bread on one side and set aside.
  • Shred the cheese.
  • Place a pieace of bread on the hot griddle butter side down.
  • Pile cheese, pico, more cheese, and bread butter side up on top.
  • Cook for 3 minutes or until golden brown.
  • Flip and cook for another 3 minutes.
  • Serve and enjoy with a side of soup.
