BREAKFAST FRIED RICE

Breakfast with a twist. Fried rice with scrambled eggs, turkey bacon and green onions. It’s fresh and delicious with a splash of Cholula on top for some heat.

When you think of breakfast, rice is not one of the first things that come to mind. but, it works great. It’s another food item that can be used in so many different ways.  This recipe is delightfully different and healthy too.

 

WHAT YOU NEED

turkey bacon
salt
black pepper
eggs
butter buds
rice
green onions
Cholula

 

HOW TO MAKE IT

Cook rice according to package directions. Cut the turkey bacon into little chunks. 

In a nonstick skillet cook bacon until crispy, about 6 minutes.

Lower heat to medium-low and add the eggs. Using a spatula move the eggs around the pan until they are fully cooked, about 2 minutes. Add rice and green onion and cook, breaking up the rice if needed with a spatula, until it is heated through about 3-5 minutes. Add the seasoning and adjust with additional salt and pepper if needed.

Divide between 4 plates and garnish with hot sauce if using and serve immediately.

  • 1 tbsp butter buds

  • 2 cups rice (cooked)
  • 3 green onions (chopped)
