Szechuan Shrimp

Ingredients
  

  • 1 tsp sesame oil
  • 3 green onion (sliced)
  • 1 3/4 cups of shitake mushrooms
  • broccoli florets (chopped)
  • 1 red bell pepper (sliced)
  • 2 tsp minced garlic
  • 1/4 lb raw shrimp
  • 1 tsp ground Szechuan pepper (fresh or ground whatever you can find)
  • 1/4 tsp red pepper flakes
  • ginger
  • 2 tsp tamari or soy sauce
  • 1 1/2 oz lo mein noodles
  • 2 tsp black sesame seeds
  • 1 tbsp fresh cilantro for garnish (chopped)

Instructions
 

  • Heat oil in a medium skillet over medium-high. 
  • Boil water for pasta
  • Cook pasta according to package directions
  • Slice the veggies.
  • Add onions, mushrooms, broccoli, bell peppers and garlic. Stir to coat with oil and cook for 3 to 4 minutes, stirring frequently, until broccoli is bright green.
  • Stir in shrimp, Szechuan peppers. Ginger, and red peppers flakes, cook for 1 minute.
  • Stir in tamari and 2 tsp water, and cook for 3 to 4 more minutes, stirring frequently, until shrimp is opaque and vegetables are tender.
  •  Add up to 2 tbs water, if needed to prevent sticking.
  • Toss the mixture together with noodles.
  •  Garnish with sesame seeds and cilantro.
  • Serve and enjoy.
