Smoked Salmon Breakfast Bagel

Ingredients
  

  • 4 poppy seed bagels
  • 2 tbsp butter
  • 8 oz cream cheese
  • 12 eggs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp green onion
  • 2 tbsp parsley
  • 12 smoked salmon slices

Instructions
 

  • Preheat oven to 350 F
  • Split the bagels and toast in the oven for 5 minutes
  • melt butter in a large non-stick pan
  • in a mixing bowl add eggs, cream cheese, salt, and pepper
  • mix until smooth
  • add egg mixture to the pan and push around with a wooden spoon until done. About 7 minutes
  • chop the green onions and parsley
  • when the eggs are done add the green onions and parsley
  • when the bagels are toasted assemble with egg mixture, smoked salmon between two bagels
  • serve and enjoy
