Instructions
Cook rice according to package directions. I use chicken broth in a rice cooker.
Add the Fish, Onions, Pepper, Celery & Cajun Seasoning to the instant pot.
Sauté for 5 minutes, then press cancel.
Add the chicken broth, diced tomatoes, tomato paste, bay leaves and stir well.
Put the lid back on and set for 10 minutes, and release.
Add the shrimp and set for 5 minutes
Serve and enjoy.
Notes
If you do not want to cook rice on the side, you can always add the rice directly to the pot when you add the chicken broth and tomatoes.
