TORTELLINI SOUP
Spicy Tomato Soup with Italian Turkey Sausage, Spinach, and Cheese Tortellini mixed with Creamy Parmesan Sauce.
This soup is delicious even without the Tortellini in it. It’s hard to believe that something this yummy can be low in calories, but I promise it is. I could drink this with a staw and be a happy girl, lol. I know I say all my recipes are oh so yummy. You should try them and find out =) Make sure to let me know what you think.
WHAT YOU NEED
olive oil
chicken bouillon cubes
Italian turkey sausage
white onion
crushed garlic
crushed tomatoes
baby spinach
black pepper
cayenne pepper
cumin
frozen tortellini
skim milk
parmesan cheese
flour
HOW TO MAKE IT
In a bowl add 6 cups of water and 6 chicken bouillon cubes. Heat olive oil in a large pot on medium. Chop onions and garlic and Sautee for a few minutes. Add the Italian Turkey Sausage. Mix well and brown until done. mix in the black pepper, cayenne pepper, and cumin. Add the Crushed Tomatoes. Cook until bubbly. Add the chicken broth, and baby spinach cover and turn the heat up to a boil. Add the Cheese Tortellini and cook for 6 minutes. In a bowl mix the skim milk, 1 tbsp flour, and 1 cup parmesan cheese. When the Tortellini is done remove from heat, and add the milk and cheese mixture. Serve and enjoy

Ingredients
- 1 lb Italian turkey sausage
- 1 tbsp olive oil
- 1 yellow onion
- 5 tsp crushed garlic
- 32 oz crushed tomatoes
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp cumin
- 6 cubes chicken bouillon
- 6 cups water
- 1 bag baby spinach
- 1 package frozen cheese tortellini
- 1 cup skim milk
- 1 cup parmesan cheese
- 1 tbsp flour
Instructions
- Add 6 bouillon cubes to 6 cups of water
- Heat oil in a large pot
- Chop onions and garlic
- Sautee onions and garlic in hot oil for a few minutes
- Add the Italian turkey sausage
- brown stirring often
- Add the black pepper, cayenne pepper, and cumin
- Add the crushed tomatoes stir a few minutes
- add the spinach and chicken broth
- cover and turn up the heat to boiling
- when its boiling add the tortellini
- cook for 6 minutes
- in a small mixing bowl add 1 cup skim milk, 1 cup parmesan cheese, and 1 tbs flour mix until smooth
- add milk and cheese mixture to the pot and stir well
- Serve and enjoy
