I have to say, this is hands-down the BEST meatloaf I’ve ever had! Every bite is packed with bold, smoky flavor, and melty cheese and a rich, tangy BBQ glaze that takes it to the next level.

And did I mention it’s stuffed with cheese? Yep, this isn’t your average meatloaf—it’s a flavor explosion that’ll have everyone coming back for seconds! Whether you’re making it for a cozy family dinner or a weekend cookout, this meatloaf is sure to impress.

Ingredients You’ll Need

  • 1 lb. ground pork
  • 1 lb. ground beef
  • 10 strips bacon (cooked & chopped)
  • 2 eggs
  • ½ cup Italian bread crumbs
  • ¼ cup milk
  • ½ cup yellow onion (chopped)
  • 2 cups cheddar cheese (shredded)
  • 1 tsp Adobo seasoning
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 ½ cups BBQ sauce
  • 1 ½ tbsp. honey
  • 1 ½ tbsp. brown sugar

How to Make Smoked Cheesy Meatloaf

Step 1: Get the smoker ready

Preheat the smoker to 300 degrees

Step 2: Mix it up

In a mixing bowl combine all the ingredients, except BBQ Sauce.

Step 3: Prepare

Place on a baking sheet and shape into a loaf

Step 4: Get is smoking

Place in the smoker and smoke for 2 hours. or until it reaches 125 degrees.

Step 5: Get the sauce ready

In a small mixing bowl combine the BBQ Sauce, Honey & Brown Sugar.

Step 6: finishing touches

Take meatloaf out and brush with the BBQ Mixture.

Step 7: let the smoker do its magic

Cook for another 30 minutes. or until it reaches 160

Step 8: enjoy with extra BBQ sauce on the side.

Serve & enjoy.

Let the meatloaf rest for 5-10 minutes before slicing. Serve with extra BBQ sauce for dipping!

Notes

I like to mix my cheese directly into the meatloaf so it stays locked in and doesn’t escape while cooking. But if you’re craving that ooey-gooey, cheesy center, you can always shape the meat into a bowl, stuff it with cheese, and seal it up for the ultimate stuffed cheese meatloaf. Either way, you’re in for a delicious, melty bite every time!

Tips & Variations

For extra smokiness, use a hickory-smoked BBQ sauce!
Want it extra cheesy? Swap out cheddar for a blend of smoked gouda and Monterey Jack.
