BUMPEN CHICKEN & DUMPLINGS

Spicy sauteed pepper, tomatoes, garlic, and parsley. Mixed with potato gnocchi, juicy rotisserie chicken, and smoked mozzarella. Topped with parmesan cheese.

Talk about some kick. You are gonna need some water around for this one. This is one of my spiciest recipes and I can say that it is on my healthy recipe list. I have tried doing the chicken in different ways. I even tried smoking it for a little more smokey flavor. I think rotisserie chicken works best, and it’s super easy just to pick one up at the store.

 

WHAT YOU NEED

olive oil
diced tomatoes
minced garlic
black pepper
crushed red pepper
salt
parsley
basil
liquid smoke
rotisserie chicken
smoked mozzarella
gnocchi
parmesan cheese

 

HOW TO MAKE IT

Preheat oven to 350 F. Pul the meat off the bone of the rotisserie chicken. Set aside. Heat a pot of water to cook the gnocchi. Heat oil in a large pot. Add the garlic and crushed red pepper. Sautee for 2 minutes.

Add the diced tomatoes, parsley, salt, and pepper. Turn the heat down to a simmer. Cook the gnocchi according to package directions. Shred the cheese while it simmers. Add the liquid smoke, chicken, cheese, gnocchi, and 2 tbsp parmesan cheese to the pot and mix well.

Add to a baking dish sprinkle the remaining parmesan over the top and bake for 15 minutes.

Ingredients
  

  • 1 rotisserie chicken
  • 8 oz smoked mozzarella
  • 1 package gnocchi
  • 1/4 cup olive oil
  • 4 tbsp minced garlic
  • 1 tbsp red pepper flakes
  • 28 oz diced tomatoes (drained)
  • 1 1/2 tbsp salt
  • 1 tbsp black pepper
  • 1/4 cup parsley (chopped)
  • 1/4 tsp liquid smoke
  • 4 tbsp grated parmesan cheese

Instructions
 

  • Pull chicken off the bone and set aside
  • Preheat oven to 350 degrees F
  • Heat water in a large bot for the gnocchi
  • Heat oil in a large pot
  • Add the minced garlic and crushed red pepper. Sautee for 2 minutes
  • Add the diced tomatoes, salt, pepper, parsley, and basil mix well
  • cook gnocchi according to package directions
  • shred the cheese while it simmers
  • Add the gnocchi, chicken, cheese, and half the parmesan cheese, Mix well
  • Add to a baking dish and sprinkle the remaining parmesan cheese over the top.
  • Bake for 15 minutes
  • serve and enjoy
