Smoked Cheesy Meatloaf
I have to say, this is hands-down the BEST meatloaf I’ve ever had! Every bite is packed with bold, smoky flavor, melty cheese, and a rich, tangy BBQ sauce that takes it to the next level. Smoked Cheesy Meatloaf

Equipment
- Large Mixing Bowl
- sheet pan
Ingredients
- 1 Lb. Ground Pork
- 1 Lb. Ground Beef
- 10 Strips Bacon/Small Package Cooked & Chopped
- 2 Eggs
- 1.2 Cup Italian Bread Crumbs
- 1/4 Cup Milk
- 1 Tsp. Adobo Seasoning
- 1 Tsp. Garlic Powder
- 1/2 Cup Yellow Onions Chopped
- 1/2 Tsp. Black Pepper
- 2 Cups Cheddar Cheese
- 1.5 Cups BBQ Sauce
- 1.5 Tbsp. Honey
- 1.5 Tbsp. Brown Sugar
Instructions
- Preheat the smoker to 300 degrees
- In a mixing bowl combine all the ingredients, except BBQ Sauce.
- Place on a baking sheet and shape into a loaf
- Place in the smoker and smoke for 2 hours. or until it reaches 125 degrees.
- In a small mixing bowl combine the BBQ Sauce, Honey & Brown Sugar.
- Take meatloaf out and brush with the BBQ Mixture.
- Cook for another 30 minutes. or until it reaches 160
- Serve & enjoy.
Notes
I like to mix my cheese directly into the meatloaf so it stays locked in and doesn’t escape while cooking. But if you’re craving that ooey-gooey, cheesy center, you can always shape the meat into a bowl, stuff it with cheese, and seal it up for the ultimate stuffed cheese meatloaf. Either way, you’re in for a delicious, melty bite every time!
